While you cannot currently change your height via in-game settings, as of V34 Oculus provides an Experimental Setting called "Raise View". Many players who play seated use this to both appear 'normal' height in game and have a better view of the dart board.
On your Oculus headset, go to:
Settings > Experimental > (scroll to the bottom of the list) Raise View > Toggle On
Avatar still too low, even when you're standing? You might need to adjust your floor height in your guardian settings:
